I'm not sure what's wrong with me, but my friend says that I'm "nesting" (but no, I'm not pregnant!). All of a sudden, I'm obsessed with home decor, making sure I have all the proper cooking utensils, dining tables (which I've decided I want to choose the wood myself...), and for the past week: lamps.

Finding the perfect bedside lamp has become my sole purpose the past week and everything that I've looked for has either had the wrong base, perfect shade or perfect base but wrong shade. Even the separates at Target didn't have what I was after... until I Googled and found the below lamp.

Ahh... the feeling of success - it's love! I love lamp.

Travel // Fiji time...

Last week I went to Fiji... for work :)

I had a great time and was quite productive despite what you're probably thinking! I hung out with some locals, and even got to visit some villages with youth "peer educators" who speak to young people about safe sex, alcohol and substance abuse and how to get jobs. It was eye opening and very encouraging to see young people taking that sort of action. I even enjoyed the slippery mud track which had us all squealing and grabbing each other for support!

I also had a lovely adventure consisting of missing my flight back to Sydney because of a slow taxi driver, and me not having enough cash to pay him - which led to me giving him an IOU. Crazy times when you travel with me! Haha

For some reason, because it was a "work trip" I didn't think to bring my camera! I guess I associate camera with holiday, so my trusty iPhone 4 camera had to do the job - and gosh am I impressed! Please don't mind the over usage of Instagram :-)

On our way back to l'Australie we spent a fantastic week in Thailand: just sun, sand, beach and shopping! We went to Bangkok and Phuket - it was great, just what I needed to clear my head and put things into perspective. We went snorkleing, did a lot of reading and we did a lot of eating! Ice cream, McDonalds, Pad Thai...hrmmm basically everything! I highly reccommend going to Thailand, and if you ever go, just ask me for some great places to visit! xx

Life // Two years has come to an end...

I initially created this blog as a way to document my inspiration, things that I love, 'virtually' shop, and basically just day dream. It kind of turned into an escape. In January 2009 my husband and I moved to Nepal for my work (I was an intern with an Aid Organisation), which was a huge and uncertain thing, seeing as we also got married the week before we moved. So much has happened in the past 2 years I can't even begin to summarise it all, but I know it will be one of those experiences which I won't realise how much it has impacted my life until later on down the track.

I have mixed feelings about leaving Nepal; excitement (to go home to Australia), uncertainty (no job, no home waiting for us in Aus), expectation (that Australia will be the same?!), sadness (leaving Nepal and people we have grown greatly fond of), anxiety (for time to hurry up to Friday morning), stress (how am I suppose to fit 2 years of life in a suitcase!?), happiness (to see old friends and family in Aus), disappointment (in leaving Nepal when there is still so much to be done), and as much as I don't want to admit it, a little bit of regret. You see, I think that my planning and traveling bug kind of got in the way of us enjoying and appreciating Nepal to it's full extent (or as much as possible). Instead of enjoying where I was in the world, I was planning trips to more interesting and history-filled places when I could've just opened my door and probably my eyes more too.

But anyway, I'm trying to focus on the things that I have done and what I can take from this experience and if I write them all down I'm sure it will turn into some sort of biography! So here it is in pictures...

Sometimes I wish I could keep things down to a few sentences, but alas when I start writing I can never seem to stop! Life // New Resolutions for 2011

The Number 1 thing about 2011, is that we are going to be home in Australia :-) I almost feel like I could end the blog post there!

I mean the first week of 2011 will be spend in Nepal, but after that it will be all things Aussie and family and friends! I'm so excited!!

I'm pretty proud of myself in 2010. I was able to complete my 2010 'goals' which consisted of:

~~To take French lessons~~
Stop buying stuff online
~~Go to Paris~~

Numbers 1 and 3 easily done, but number 2 was a little bit difficult! In comparison to 2009, I definitely decreased my online spending, but it was still up there in the "probably shouldn't have bought it" category.

So for 2011:

Eat healthier food (more home cooked meals; start putting together recipe book).
Go to America (LA and SF [and also NY?!]- for my cousins wedding in June).
Visit 2 new countries (then I can cross off "20 countries before 25" on my bucket list).
Get a job (since I don't have one at this point for 2011).
Buy a Chanel classic quilted black bag (my husband finally said I could - but it's dependent on the job issue!).
Sponsor a couple of Nepali kids schooling for the year.

Life // Christmas in Nepal

Christmas Eve begun with a ginger bread decorating contest between my husband and I. Clearly he won (his is on the right)!

Then we had an intimate lunch on Christmas day at our friends place. There were 3 couples, a roaring fire and a gorgeous Thai/Nepali/Swiss mixed baby girl :-)

I can't believe it's Christmas already! I guess it really doesn't feel like it since we will be spending it here in Kathmandu, Nepal. It's a bit sad that we aren't home with our families and friends, but I guess we just have to look beyond that and the fact that we will be in Australia on January 14th and get to (hopefully) spend the whole of 2011 with our family and friends! Two weeks from today we will be leaving Nepal after 2 years of trial, hardship, excitement and joy.

Anyway, more on that later...it's Christmas!

Travel // Ladurée, Paris

A visit to Paris is only complete once you have visit the original macaroon maker, Ladurée. Our last day in Paris was an intense rush as we were attempting to meet up with our friends' friends, and then me and my friend were trying to meet up with our men (we split up to do some girls' shopping without the boys!). We were all suppose to meet under the Arc de Triomphe at 3pm and then proceed to go up the Eiffel Tower, but of course it didn't go to plan. My friend and I ended up waiting underneath the Arc de Triomphe for about 2 hours, but alas no one showed up! So we decided to walk down the Champs Elysées and take in the Parisienne atmosphere. We saw so many people with Ladurée bags, but couldn't find the store, and because of how late it was getting (since we missed a couple of hours waiting) we thought we would leave Paris without trying the famous macaroons.

Anyway, fast forward a couple of hours and we finally meet up with our boys (surprised they didn't get lost) and we decide to find dinner then walk down the Champs Elysées all the way to the Lourve. As we are searching for a good restaurant to eat at, low and behold we come across the annex of Ladurée! To say I was excited is a massive understatement!

After a little line up and a few hard decisions later we had our little pack of macaroons and took them down to the Lourve to enjoy by the fountain and the mesmerising pyramid :)

Eating... Lemon slice made by moi!
Reading... 'The Girl who kicked the Hornet's Nest' by Stieg Larsson: The third book in the series! Can only read it in large chunks of time because of the description and suspense overload.
Listening... Marching bands playing as wedding season kicks off here in Nepal! The whole wedding party walks around the streets with a wedding band followed by their family and friends. Talk about a celebration!
Wanting... Lace shorts and a khaki playsuit for Thailand :)
Excited about... My birthday next week. But not so excited about the turning 24 years old bit :P

I love Olivia Palermo's cape while out shopping in New York City. It's By Malene Birger and looks so warm and cozy and so perfect for the upcoming winter!

Also, have you heard the news? That The City is not returning for a third season! So sad...but I guess there is only so much of the same drama they can show! Anyway, Olivia is making her mark in the modeling world. Her latest involvement with Mango, modeling with her model boyfriend, have everyone going crazy in the fashion blog world! I'm wondering if she's going to take over Scarlett Johansson's role as the brands' ambassador. But I guess we'll have to wait and see!

Just a Minute in...October

Am I allowed to post for October now? It's only early November. Coz to me, October just ended now that our trip has finished and we are back in Nepal! So I thought I would reminisce about what we were doing on my favourite day of our trip, which was of course our first full day in Paris!

Let me just fill you in: we've just spent 4 days in Morocco - 2 days of which my husband and our friends we were traveling with, were sick (me too, but not as bad as them).

It's Monday 24th October, 2010: we are exhausted, excited to be in Paris and have a cute little apartment in the 10th arrondissement which I found via Airbnb.com (and I highly recommend using it!).

Watching... Criminal Minds - season 4 - put the whole thing on my ipod just for our journey!
Eating... I think it should be: what am I not eating! But it's safe to say that croissants seem to be what I keep shoving in my mouth!
Reading... 'The Girl with the Dragon Tattoo' by Stieg Larsson (note: I ended up finishing it in 2 days)
Listening... To beautiful French being spoken all around me and loving it!
Wanting... For once in a long time, nothing. I'm quite content after our trip :) I went into lots of shops and fulfilled my little list from 'Just a Minute in...September'
Excited about... And probably still excited about seeing the beautiful Eiffel Tower, Sacré Coeur, Notre Dame, the River Seine, the Lourve, the Parisienne buildings, eating crepes filled with nutella and almonds, eating baguettes...I could seriously go on!

Paris stole another heart...which was mine.

Abu Dhabi, United Arab Emirates

We arrived here and it's HOT! But yesterday we visited the beautiful, amazing, magnificent [insert more similar descriptive words here] Sheike Zayed Grand Mosque. It was amazing, built based on the architecture of the Taj Mahal in India. It's made completely of marble from different countries around the world. Most of it is gold leaf plated, while the chandeliers are made with Swarovski crystals. The mosque has the largest hand woven carpet of its kind in the world, plus many other record breaking features which has slipped my mind! It really is spectacular. We women had to wear black abayas which was an interesting experience. Inside the mosque, the security would rush to women the minute their head scarf would slip back and tell them to pull it up (yes, he told me off multiple times!). I even saw a couple having a photo and the security man told them to stand further apart - men and women no mingling here! Anyway, some photos....

On our trip we are spending a couple of days in Milan, Italy and I was trying to find some information on the city that wasn't fashion related so I could get an idea of the place. I came across this blog, Mint Sugar, and saw that this girl had just visited Milan with some lovely [what I think are] lomography photos. Unfortunately I can't read Italian, and am a bit lazy to put it through google translate, but the photos suckered me in - especially the gelato one! I will definitely be having some of that!

Despite some criticisms, I love this collaboration between Bono and wife, Ali Hewson 's ethical clothing label, Edun, and Louis Vuitton. It is suppose to bring 'international exposure' to Edun's mission to eradicate poverty through sustainable enterprise in Africa.

Photographed by the remarkable Annie Leibovitz, the campaign continues LV's popular travel themed ads into Africa with the tag line, "Every journey begins in Africa" which is also etched onto the special edition Keepall style embossed in monogram canvas, and with a special charm hanging off of it. Proceeds from sales of the bag will go to TechnoServe and the Cotton Initiative.

I love a good cause, especially when a luxury brand is involved. But I often wonder, does the fact that the profits made on the bag go to charity, drive sales further or hinder it? There's a question to ponder...

I received my regular Topshop update email in my inbox today and what caught my eye was the t-shirt and long sleeved goodies labelled in French by Ashish. Why?

Firstly, well as you all know I'm learning French.
Secondly, we have a friend that is living in London and his name is Ashish.

I can't believe it's already nearing the end of August! My trip to Thailand has come and gone and now I'm hit with the realisation that Fall is knocking on the door and soon I will have to wear big coats! Time flies when you're kind-of having fun!

Watching... Criminal Minds - currently up to season 2 and as much as I love the show I struggle to watch it by myself sometimes. It can be really scary!
Eating... Can I have 'dreaming of eating' instead? Dreaming of eating the amazingly CHEAP and DELICIOUS food in Thailand that I was consuming last week! Here are some examples: mango with sticky rice and coconut milk, delectable chocolate brownie sundaes, papaya salads, McDonalds (I live in Nepal okay!) and my all time favourite, pad see-ew noodles!
Reading... 'The Alchemist' by Paulo Coelho for some direction and inspiration in my life.
Listening... Eliza Doolittle! Lily Allen + Lisa Mitchell = Eliza Doolittle.
Wanting... Lots of things! Stay tuned for a lust list!

Label Love // Mango

I'm currently in Chiang Mai, Thailand and couldn't resist blogging this! This FW'10, Zara has been beaten in my label love stakes. I didn't think that their Lookbook was up to their standard and looked a little bit serious and too grown up for me! So instead Mango is my pick. I love the camel, red and navy colours and just the general fun vibe :)

Love to Hate: Packing

By now, I'm starting to think that I have my travel essentials down pat. I love that the more you travel, the less stressful it gets (and I guess the less of a novelty it becomes!).

So as I pack for my trip to Thailand on tomorrow, here is what I'm packing and suggesting for on-board comfort...

Pashmina or a scarf: silk or cashmere or wool! Since coming to Nepal I have truly learned the versatility of a pashmina. Even if you are going to a tropical destination a scarf instantly dress's up your look and serves multi-purposes; make it a pillow, a blanket to combat the terminal or plane's air conditioning, a pillow cover if your hotel's pillow aint' so clean, The possibilities are endless! I have a 70% Pashmina/30% Silk shawl that I carry with me on every trip out of the Kathmandu valley. Check out this Mulberry - Loopy leopard-print twill scarf.

Jersey Pants or leggings: Whether you wear them on board or change after take off, these have improved my long haul flights by 200%. I call them plane pants and they are like my plane pajamas allowing me to be unrestricted and relaxed, which increases the chances of me getting some sleep! I've had my eye on these Bassike - Organic cotton slim-leg pants.

Ballet flats or mocassins: Most websites and blogs I've read lately are surprised that people are still wearing them. But why not I say? They are comfortable and look classy without too much effort. And same goes for wearing them on the plane. Ballet flats are like your slippers for the sky!

A roomy, but not too big, carry on bag: The reason why I say, not too big, is the simple fact that the bigger the bag the more you put in it, therefore making one heavy bag! And don't forget that usually you have to carry these things around the terminal and then lift it up into the overhead compartment (unless a flight attendant comes and helps you) in the plane so I'm looking out for your best interests here! My husband wishes I would follow this...

I swear by this stuff ever since I put it on a burn I did to myself with a hair straightener a few days before a date with my then boyfriend (now husband), and in those few days the burn dried up and cleared with no scar!

Other things that I suggest are don't wear too much make up and drink lots of water on board. Bring a travel size moisturiser, hair brush, iPod, a good book/magazine, and of course a camera! Keep all your travel documents in a travel wallet (or something similar) just so during the stress of everything you know where everything is.

One thing that I am dying to try is: Batiste Dry Shampoo
It's apparently a new craze so I want to see if it really works and if it would be useful for traveling. If you've tried it let me know what you thought!

Dear Paris...

My French classes are bien (I'm speaking French-lish now!). Learning a lot and getting confused a lot. I often feel like I'm in Grade 2 again learning my vowels and nouns, with a teacher who insists on perfect spelling. More than anything I cannot wait to use this French on real French speaking people (I don't count my French teacher coz he's Nepalais - despite being French in every other way!) in Morocco and Paris during our travels in October :)

I just found a cute apartment to stay in via airbnb.com (I will let you know if I recommend it after our stay) in Paris located in the 1st arrondissement right near the Lourve and Forum des Halles. Saying that I'm excited is to put it plainly! Anyway, we have to wait til the owner of the apartment replies to my email, and I hope it's a positive response!

I thought I'd just put myself in a Parisianne mood with some style photos from Paris by non other than, The Sartorialist...

Lately I've been so overwhelmed by the blogging world and it's lack of boundaries and endless possibilities. I think that's why I've been a bit stumped to blog lately because I see so many people doing such cool and unique things that I wonder what the heck am I doing! My stuff doesn't belong on the web compared to that amazing/creative/stylish/colourful/hand drawn/inspiring blog! So I've gone back to the beginning and the reason as to why I started blogging in the first place: as an escape and outlet from moving from Australia to a little country called Nepal.

I know I've been a bit slack, but I've just been so tired and busy with work, but I'm here! And I've found something inspiring and beautiful (and not just a pretty face)...

Who knew that Helena Christensen was half Peruvian? Well I didn't, those light freckles certainly fooled me, and did you know she takes photos? I guess lots of people take photos, but not everyone goes back to their heritage and takes photos to highlight climate change...unless you do (if you do - tell me about it!)?

Anyways the modeling beauty went to Peru in 2009 to take photos and draw attention to the effects of climate change as an ambassador for Oxfam. Her exhibition was held in London in November 2009 and entitled, "Meltdown: Images of what w e lose when the glaciers disappear."
And let me tell you, the things that we may lose are irreplaceable, priceless things that we can definitely have a hand in helping keep around.

So here is Helena Christensen as a photographer and her photos in Peru...and just a little note to think about this planet we live on...

Have you heard of Sretsis? Here's a way to make you remember it easier, it's actually 'sisters' spelled backwards! The brand was founded by three Thai sisters: Pim, Kly and Matina Sukhahuta with Pim having attended New York's Parson School of Design.

The clothes are fun and girly with a touch of whimsical, with prints on delicate fabric like silk chiffon and charmeuse. Sretsis', Spring/Summer 10 campaign was called, Make My Heart Melt, and that is exactly what the clothes made me do...

The Waiting City

I saw this movie over at Daydream Lily and I can't wait to see it. Since living in Nepal I am very into movies based in this region, especially India because I can relate to the imagery and most of the experiences that are encountered. The Waiting City looks really well made for an Australian movie (I had to say it!) and I was surprised that Isabel Lucas was in it too (along with other Aussie acting legends Radha Mitchell and Joel Edgerton). It comes out in cinemas in Australia July 15th...not sure how I'm going to get to see it, but I will find a way!

Delectable Dubai

I'm so excited today because we booked our flights to Dubai last night :)

In a very backwards manner we booked our flights from Dubai-Istanbul-London about 2 months ago but not Kathmandu-Dubai. So we took the risk and got bargain flights for $150 return! My hubby and I have made sure to at least try out the indoor snowboarding since we haven't been snowboarding in a couple of years, and I am very keen to hit some malls and relax on the beach! Oooh I absolutely cannot wait...

Patience really is a virtue. Because now we've saved some extra spending money! Any suggestions for fun things to see and do in Dubai?

So I found this Aussie illustrator in a Swiss magazine, Kinki. Go figure! But the guy that owns my hubby's shop is Swiss and had a bunch of magazines there and on the weekend I took the time to look through the pretty pictures and found some awesome illustrations by Melbourne boy, Rik Lee. Unfortunately I can't read German, (if you do, tell me what it says!) but I wondered over to Rik Lee's website and found out that he's stuff has been in quite a few magazines, so I may be a bit behind the times here. That's what happens when you live in a third world country! Anyways, it's fun, reminds me of Liss at Daydream Lily's sister, Bec Winnel's illustrations.

My busy-ness still continues, and I shall not be free until June 30th - and I'm not even in finance!

Q-Concept Store

In all my craziness last week, I forgot to do a Travel Feature Friday, so this week I have made sure it is the one thing I blog about. As I prepare my, ahem, shopping list for my trip to Bangkok in August (despite it being a work trip. It's going to be so hard to focus!), I was thinking of all the cool stores I have to visit. I've been there a few times now to know what to go straight for and what not to waste my time with. One store that popped into my head is the Q-Concept Store which my hubby and I discovered on our honeymoon last year.

It's a fun and quirky store that has such a variety of things in it, from crazy doll keyrings to home furnishings to clothes, you can spend hours in the store just playing with the random gadgets and toys. Like these catapult things we took a photo of: (please note the 'wedding slinger' and the 'baby shooter'!)

They have beautiful clothes and accessories, that seemed a little bit overpriced, but still beautiful nonetheless. It's the kind of shore that I would visit everyday, not to buy, but just to look and play. You would also find a gift for the most difficult-to-buy for person here, I think!

Next time you're in Bangkok make sure you pay a visit to the Q-Concept Store (even visit their website, it's all sorts of pretty!).

On my '100 things to do and get done' list (mentioned here), I've written that I have to read a book a month for 12 months. The reason why I did that was so that I would get back into the habit of reading, and hopefully after the 2 years I will continue to do it for the rest of my life (ideally)! The books in the photo (don't mind my cat in the background there), are all the books I have finished for the 6 months of this year. I started in January by reading Breakfast at Tiffany's and have now just finished my sixth book, Princess by Jean Sasson.

Well, I am a quarter of the way there to ticking number #11 off my list! Any reading suggestions for the next 6 months?

Fifi Lapin is only the most très chic bunny out! She is a cute little thing that has better fashion sense than I do (but also the budget to be able to!). It is a really crazy week for me at work, so much to do by the end of June! In all my craziness Fifi really has brightened my day. Watching... My nights are currently filled with Sex and the City season 5 - Charlotte just married Harry.
Eating... Just had a banana and some apple juice - still finishing my breakfast at work!
Reading... 'Princess' by Jean Sasson. A true story about a Saudi Arabian Princess.
Listening... to a fan on the wall rattling as it attempts to cool us off in this heat!

Lace Shorts

These ones are from River Island (only in the UK *frowns*) and also come in white. The lovely ladies from The Wardrobe Wars road tested them and they look great!

The Philippine Islands

Firstly, the Philippines is not usually known by this name. I think someone wanted to make it sound more exotic and added 'islands' to the end, and some Filipinos love it and others loathe it (I saw BryanBoy tweet that he hated it). Anyways, I am very proud of the fact that I am half Filipino (ha they say it's a new race - there's so many!), especially because I get to spend wonderful holidays by the beach side all in the name of 'seeing family'. My mum comes from the island called Mindanao, which is the biggest and most southern island and her hometown faces west, so can you imagine the amazing sunsets we get to witness every evening? Breath-taking! My fondest childhood memories are jumping off the rocks into the beautiful crystal clear water (I refuse to jump now - the rocks have danger written all over them!) and going boating up and down the coast with my cousins. Such fun fun times!

But alas, I'm a little bit sad at the moment as my parents are over there right now enjoying some wonderful beach and family time while I slave away at work here in Nepal *sigh*. This is the second time my parents have gone with out me and it sucks!

India's IndiGO Airlines just released this new ad entitled, 'On Time Client' which is what we wish all airlines would try to do! I thought it was a really fun and modern commercial and it's nice to see an airline acknowledge what can happen if all their flights ran 'on time'. I like the implied chic hotel and the mod 70's outfits too! Such fun! :)

Time Stealer

So I've been writing this 100 things to do list, as mentioned here, and I've come to realise that life is so short that I may not even get all these things done! It's kind of a scary thought because I'm a goal oriented person, and I want to be able to check all these things off my list! But because of this realisation that life is so short, I now also know how important it is to fulfil those awful (not really) niggling, tickling, knocking-on-your-door dreams. If life is looking too short for me to fulfill my 100 things list, imagine that one huge dream that you have always had and still have. It may take your whole life to do it, so you may as well start now! {via Daydream Lily}

Here is how my list is looking (yes, I've only made up to 10 - it's really hard!):

1. Sit courtside at a LA Lakers basketball game

2. Visit 20 countries before I’m 25/30 countries before I’m 30 years old

3. Write and publish a book of some sort

4. Learn French and/or Spanish (at least conversationally)

5. Attend a fashion show in New York City

6. Visit Ayers Rock (Uluru)

7. Own a Chanel 2.55 Quilted Leather bag

8. Get a Master’s Degree

9. Get a feature story published in an internationally recognised magazine

10. Devote at least a year to Missionary work in the heart of Africa

Blake Lively for Vogue

I hate her in Gossip Girl, but love her in real life. I think Blake Lively is naturally beautiful (except for in Gossip Girl where her boobies are always pushed out to phenomenal 'heights') and has a really down to earth personality (that I can understand from interviews). I guess she's been surrounded by the industry from a young age and has got her head around it all. But I guess I'll find out more if I go out and buy the June issue of Vogue, won't I? She totally has that 'California Cool' thing going for her!

Wanderlust List

Recently my husband was inspired by this blog to make a list of 100 things to do before he dies (God forbid anytime soon!). Naturally, it rubbed off on me and next thing you know I'm ratting my brains trying to think of even 10 things to do! But one that is a high priority on the list is visiting 20 countries before I'm 25 years old. I turn 25 in December 2011 and I'm nearly there on the list, but just need a little push along!

This year we will be visiting the United Arab Emirates, Turkey, U.K, France and fingers crossed, India! So that's 16 countries, leaving four to visit next year.

There are a few ground rules: airports don't count, at least a day (12 hours) must be spent outside of the airport's surroundings and some sort of cultural experience is to be had!

In the Sun

The weather is spectacular here in Kathmandu at the moment. Clear blue skies and warm winds (don't worry, I won't start on my "there's no beach" rant again), and it really is inspiring me to get out and do some active stuff in the sun. In the blogosphere, lots of European bloggers have recently been to a concert by She & Him, in which the intriguing Zooey Deschanel is the 'she'. I thought I'd listen to some of their stuff and get acquainted. I'm not sure if I love her or hate her, (definitely didn't love her/her character in 500 Days of Summer), and I'm still not sure what I think about She & Him's lolly-pop sound. But one thing I know for sure, is that this song is perfectly suited for today...

Dion Lee's pleats

There was lots of rave and accolade for Dion Lee's S/S 2010-11 collection at the Rosemount Australian Fashion Week last week. It was a beautiful summery collection with pastel blues and lilacs, but my favourite was the delicate pleating on pretty skirts and dresses. New obsession: pleating!

French Apple Pie

This week has been a bit crazy for me, so sorry for the lack of blogging. In Nepal there have been some crazy political protests and the whole country has been 'closed' by a political party, so no shops open, no vehicles on the road and I've pretty much been working from home all week (with lots of tea breaks and movie breaks :P ). Anyways, so I haven't really been in the frame of mind to blog about wonderful things.

But one thing I did bookmark this week that I'm going to try to make (once all the shops open), to prepare us for our trip to Europe is a French Apple Pie. The recipe can be found at that link, but I thought it would be nice to post it up here with some pretty pictures too. If you try making it let me know how it goes!

The Filling
5-6 Medium Apples
120ml (1/2 Cup) Sugar
60ml (1/4 Cup) Honey
45ml (3 Tbsp) Butter (unsalted*)
10ml (2 Tsp) Lemon Juice
(from a lemon, for crying out loud, not a bottle!)
Lemon Zest (1/2 of a lemon peel)
2ml (1/2 Tsp) Salt

The Crust
240ml (1 Cup) Flour
(Use the best all purpose flour available.)
2ml (1/2 Tsp) Salt
10ml (2 Tsp) Sugar
100ml (7 Tbsp) butter (cold and unsalted*)
~30ml (~2 Tbsp) Ice Cold Water

The Technique

Important Notes:
This recipe requires a 25.4cm (10 inch), cast-iron skillet. No other type of skillet will do! You will love it! So no complaining.
Use oven mitts to handle your cast iron skillet.
Start with the crust because it will need to be refrigerated while you prepare the filling. Important: Chill your butter. The success of this crust depends on it!

Step 1: Prepare the Crust
Pour the flour, salt, and sugar into a medium bowl. Combine them well with a large spoon. Cut the butter into small pieces and add it to the dry ingredients. With a pastry blender, blend the butter into the dry ingredients until the mixture forms pea-sized grains. Continue to blend and add small amounts of the cold water until the mixture begins to stick. Flour your hands and press the mixture into a ball. Wrap the dough ball with plastic wrap and refrigerate it while you make the filling.

Step 2: Prepare the Apples
Peel and core your apples into 6 or 8 slices each. Place them in a large bowl. Add the salt, lemon juice, and lemon zest to the apple slices and toss thoroughly.

Step 3: Preheat your oven to (195° C.) 380° F.

Step 4: Cook the Filling
Note: The golden color is controlled by the temperature at which you melt the butter in this step. If your skillet is too hot, the butter will become quite brown and your tarte will look muddy. We want a golden brown appearance. So start with low heat.

Preheat your cast-iron skillet under low heat and melt the butter. While you stir the butter, add the honey and sugar. Continue to stir and slowly bring the mixture up to medium heat. The mixture will have a granular quality to it at first. As it warms, the texture will become smooth and the color will become light gold. This process will take from 6 to 7 minutes from the time the butter starts to melt until the texture becomes smooth. Remove the skillet from the heat. Use an oven mitt on the handle!

You will make two layers of apples in the skillet. Place the apples into the skillet in a round pattern to form the first layer. Then add a second layer of apples. Place the skillet over medium heat and cook the apples for about 15 minutes. (Be careful! Do not let the mixture boil over.) Remove the skillet from the heat. Let the mixture cool for about 10 minutes.

Step 5: Apply the Crust
Take the dough from the refrigerator and remove the plastic wrap. Roll out the dough on a well floured surface to make a circle of 28cm (11 inches). Transfer the dough to the skillet. Press the edges of the dough to the inside edges of the skillet. Cut a few vents into the crust. Let everything rest for 5 minutes.

Step 6: Bake the Tarte
Place the skillet into the oven and bake the tarte at 195° C. (380° F.) for 45 minutes or until the crust is golden. Remove the skillet from the oven and let it rest for about 3 minutes.

Step 7: Turn out the Tarte
Note: Be careful and remember to use your oven mitts. This is a little tricky, but you can do it!
Take a large serving or dinner plate and center it, bottom side up, over the skillet. Hold the plate firmly to the skillet. With an oven mitt, hold the skillet by the handle. Quickly and confidently turn the tarte from the skillet on to the plate.

Step 8: Enjoy!
You can serve your Tarte Tatin warm or cold. Purists say to eat it warm. I prefer to refrigerate the tarte overnight. This allows the honey and apple flavors to harmonize into that resonant chord of sweetness that we talked about.

Doesn't Michelle Obama look absolutely stunning in this vibrant red gown by Nepal's Prabal Gurung? She really was the belle of the ball at the White House Correspondents' Association Dinner in Washington DC on Saturday night.

Now I also mentioned Prabal Gurung. And I'm oh, so proud of him. I'm not a Nepali, but after living in the country for nearly a year and a half, and seeing how it's slowly declining instead of going forward (that's a whole other development/social article in itself!), it's nice to see promising things coming out of Nepal. And the best part is that Prabal Gurung isn't ashamed of where he has come from, because he knows how important it has been in making him the designer he is today. His designs are classic, relevant, recession-proof, elegant, stunning, magnificent, I could name 100% adjectives to describe his dresses.

Travel Feature Friday that is. Because I realised that I can't live without travel, you see. I've come to realise that as much as fashion and shopping is, seeing the world is a big part of my life and my personality.
So back to regular travel posts I go, I'm going to give you the stylish, the glamorous but also budget and backpacker just so we've got the whole range covered :)

Today: Stylish and Glamorous in Paris (just to get me inspired for my upcoming trip).

This is the beautiful Hôtel de Sers, located in central Paris in the 8th arrondissement, is has beautiful views of steeples and Parisien rooftops (from it's apartment suite anyway). Originally built in 1880, it has been recently renovated with a classic facade that has not lost the feel of the original mansion.

I love how despite it's columns, chandeliers, portraits of dead people (I'm sure) and red carpeted hallways, everything that has moved into the building is of modern and retro origin. The chairs, the tables and the cushions which are bright and flirty, make this place and interesting hotel to experience.

Prices range from US$730 to a striking $3,100! Je ne peux pas le croire! And that doesn't include breakfast!

You should be finally feeling it by now (Northern Hemispherians), that breeze with a hint of dry heat in it.
